Vegetable Lasagna
Fresh lasagna noodles layered with ricotta, fresh mozzarella cheese, zucchini, yellow squash, thinly sliced eggplant, spinach, red and yellow peppers. Smothered in a Marinara sauce and garnished with freshly grated Parmesan cheese.

Santa Fe Veggie Pasta
Roasted red pepper cream sauce tossed with snow peas, corn, asparagus, yellow squash, garlic, red onion, and cilantro and penne pasta. The finished plate is garnished with shaved Reggiano Cheese.

Egg Plant Rollantini
Slices of eggplant stuffed with toasted pine nuts, fresh basil, and garlic, blend of ricotta, mozzarella, parmesan and goat cheeses. Smothered with zesty tomato sauce, mozzarella cheese and baked till bubbly.

Vegetarian Chili
A hearty meal made with crumbled Boca burgers, vegetable stock, onion, and garlic, yellow and green squash, tomatoes, Italian Seasoning, oregano, cumin, chili powder, black beans, chick peas and fresh cilantro. Served with brown rice and fluffy corn bread.

Harbor View Veggie Burger
The real deal! BBQ sauce, molasses, black beans, brown rice, oat bran, onion, beets, jalapeno, chili powder, cumin, sea salt, egg and Monterey jack cheese... Formed into thick patties and grilled in an iron pan.

Egg Plant Parmiginia
Thinly sliced eggplant dredged in seasoned flour, eggs and seasoned reggiano bread crumbs and baked till golden. Each layer smothered with a chunky tomato sauce, mozzarella and reggiano cheeses. Baked till bubbling, served with bite size Rigatoni.

Spinach Lasagna
Red bell peppers, spinach, onion, garlic, oregano, basil, thyme, salt and pepper sautéed till tender. Tossed with ricotta, egg, mozzarella and parmigiana cheeses. Layered between lasagna noodles with more oozing cheese, smothered with tomato sauce. Baked till golden and bubbly.

Shiitake & Sun - Dried Tomato Lasagna
Sun-dried tomatoes, shiitake mushrooms, shallots, garlic, tomatoes, thyme, oregano with Béchamel sauce, baked with freshly grated mozzarella & parmesan cheeses.

Home Made Potato Gnocchi with Vegetable Bolognese
Freshly made Potato Gnocchi served with a Vegetable Bolognese made of celery, carrots, onion, red bell pepper, garlic, gently sautéed till soft. Slowly simmered with Zesty tomato sauce and Mascarpone cheese. Garnished with Parmesan.

Baked Risotto with Asparagus, Spinach & Parmesan
Onion, Arborio rice, spinach fat free less- sodium vegetable broth, nutmeg, parmesan cheese and asparagus slowly simmered and then baked.

Butternut Squash Lasagna
Olive oil, garlic, butternut squash and bread crumbs are layered between lasagna noodles with freshly made basil infused Béchamel sauce, grated mozzarella and parmesan cheeses.

Florets tossed with olive oil, salt, sugar, onion powder, garlic powder, turmeric and then roasted till golden.

Roasted Asparagus drizzled with a sauce made of sesame, rice vinegar soy sauce and splenda sugar blend. Garnished with sesame seeds.

Bite sized florets tossed with olive oil, balsamic vinegar, garlic, kosher salt and black pepper.
